So I just payed off my iPhone 6 completely from T-Mobile and requested to unlock and got the email for further steps, however it says that I need to connect to iTunes and restore, then I'll get the unlock success confirmation. The thing is, I want to keep the jailbreak that's on it as it is still on iOS 9.0.2, anyone know of a work around to this?

I was thinking of just restoring through SemiRestore9, would that work?

You don't need to do anything, once the carrier unlocks it it's unlocked. The whole restore thing is from an old process that isn't needed anymore. Your phone should be unlocked already and to use it or to check on it you can pop in a SIM card from another carrier to have it connect to it.
