In answer to all the “but why?!” questions:
  1. Some like a bigger screen but don’t have a TV in some circumstances
  2. Because it’s fun to tinker!
Generally speaking, I think Apple users aren’t the best tinkerers. Which explains the “but why” questions.

Unfortunately you have to use the Switch’s Dock as for now there aren’t any 3rd party (maybe Dbrand’s?) docks that can do video out, as explained by The Verge’s article

Even by Nintendo standards, that's a really scummy move.

No wonder nobody feels bad emulating their games (legally obtained or otherwise).
 
It'd be cooler if the iPad could play Switch 2 games without having to lug around the Switch 2. Even better if the MacBook could do it, imo, so I wouldn't need to buy an iPad.
