its like a normal sms, put in the persons number/name your are sending it too, start to type the message if send button turns blue its a imessage becasue the phone has established the reciever is on iOS 5, if the button stays green its using a sms

For an iPod touch, you can only send to someone running IOS 5 since the Touch can not do sms (i.e. it gives you an error indicator if the person you are sending to isn't on IOS 5).
