I've been holding off using Keychain because I've been afraid I wouldn't be able to easily log in any forums I frequent or any other similar site because it wouldn't be a password I would or could remember.

I have tried it on one site (gmail) and I can't seem to get it in sync with my iPhone, iPad, MacBook pro and iMac. I've manually changed it within Keychain access but that won't work if your other devices don't recognize the password.

Am I doing something wrong or is there a definitive how-to out there to get the best out of it?

Right now I can't get me gmail on my iPhone because I don't know the password.

You need to enable keychain access on all devices you wish to be in sync.

You do NOT have to use the suggested password. You can pick your own and it will save / sync that too.

You can retrieve the saved password on OS X using the Keychain Access app. You can do so on iOS by going to Safari settings and navigating to autofill / saved passwords. It will ask for your passcode and let you see the password list.
