How to use legacy mode?

I'd install win10 to a separate disk in my MP5,1(was4,1).
Is there a simple way to force installation dvd to "legacy mode"?
 
Or is it now better to install win10 in EFI mode with OpenCore?
Is this safe for the MP's firmware?
How is the EFI mode better than legacy mode?
