My hope was to have the watch dim with only the time digits but not wake me up in the morning.

So I turned on the Sleep app and set the DND to the time I will probably sleep. In the morning I got a ding and taptic at the end of the DND period -- not what I wanted.

The next night I checked the Alarm setting and it says "No Alarm" under Sleep/Wake Up, and no other alarms set. Under Health, Sleep settings I turn on the Schedule for my sleep time and said NO Wake Up Alarm. Under Sleep-Options I leave everything on excep turned off Notifications-Sleep Reminders and Notification-Sleep Results. This morning, same thing, I was awoken by a taptic and ding.

Also, I don't have any Notifications on my iphone saying that something else sent me a notification at 7am (the end of my sleep schedule).

Is there some other magic setting I'm missing?

This is probably not the cause in your case, but I'll mention it just to cover all the bases:

Are you sure the ding's not the "time to stand" alarm that sounds 10 minutes before the hour?
 
Seems what you do is correct. Try not to set a sleep schedule with dedicated wake up/sleep times, but enact manually via the sleep up in control center on the watch when you actually go to bed / wake up. There should be no alarm then.
 
@Puonti No have that set off.
@Frankfurt Yeah it doesn't ding when I don't have the schedule auto set. I'll turn off and on again and see if that helps next time, as sometimes that seems to work.

I don't normally sleep with my AW on but I stayed out on Saturday. Woke in the night, was just drifting off again, Time To Stand buzzed at 0450AM ...
 
After re-setting all the functions (as I mentioned above), I can verify that it works as expected. So enjoying it even more.
