How do I verify my phone is unlocked? I tried doing it online but ran into an issue. Had to call into AT&T. They transferred me to tech support. The tech had to submit a request to his supervisor to override things to make it happen. I got a text a few hours later saying it was all completed. So how do I verify this? I’m ready to switch to T-Mobile.

One way is to go to Settings>General>About and a little past half way down the list should be a field called Carrier Lock. If it's unlocked, it should show 'No SIM restrictions'. I've found this sometimes takes time and/or a reboot to show the change after a carrier unlock is applied.
