I tried searching for HDR on YouTube but none of the videos have an HDR option. How do I view HDR videos?

You will need a device not made by Apple. The device can do it but YouTube uses a different CODEC than Apple and since the two cannot agree you cannot view HDR nor 4K.

I don’t think this is right as I have the option to play HDR content in the YouTube app on my XS. On compatible videos, the quality is listed as ‘1080p60 HDR’. The lack of VP9 codec support just means Apple devices can’t play 4K natively in YouTube.

I would suspect that the YouTube app needs updating for the 11 Pro if the HDR option isn’t currently available.

I think you are correct that I misspoke about the HDR portion. Thanks for that.

Even on my MacBook, when I view a youtube video in safari it plays as a 1080p video but if I play it in chrome it'll play as 4k.
