If I mirror the Hulu Plus app to my TV using the HDMI adapter, I get video just in the center of the TV screen (ie: widescreen video, black bars above, below, and to each side of the video). The video does not fill the TV screen like a regular widescreen DVD would. Is this due to the aspect ratio of the iPad being different from the TV?

I could be wrong, but Hulu probably only mirrors at 1024x768.

From this site:

"Where they do get dinged is in the playback. While Netflix takes full advantage of the Digital AV Adapter, sending full screen video to your HDTV, you'll have to rely on the iPad's ability to mirror its screen to watch Hulu Plus on your television. And because it is in this mirror mode, it won't take up all of your screen.

Hint: Some HDTVs allow you to enter a zoom mode in the TV's display menu. This will offset the smaller playback window for Hulu Plus videos."
