So I'm wanting to get an iMac to last like 5 years, the same as my current iMac.
Is it worth spending $250 for a fusion drive now,
or instead waiting until Hybrid Drives catch up to what the fusion drive can offer and installing that in 1-2 years, and/or waiting for NAND flash to become so cheap an upgrade in 1-2 years would be justified?
 
Go fusion now.

I say that as a hybrid drive owner.

Hybrid is currently "good", but fusion will be much faster, more often.

Only reason i dont have fusion now is due to 2011 MBP 15" SATA bugs.

Waiting 1-2 years means you'll be using our new iMac for almost half of its usable life in a much slower state....
