You can simply see the app's system requirements in the app store.

I know it works currently with 6s, but was wondering if they would stop working starting fall of this year.

I don’t think so. I haven’t seen any apps that stop their support as soon as a phone’s firmware is not up-to-date. You’d get a minimum of an extra year of support from apps meaning the app would not become redundant at least until late 2023.
