I hate the iChat noise

Is there a way to change it to something not so loud? Something softer and more subtle?

Open (iChat) preferences and turn it off, or set it to something else.

If you are open to trying another chat client, I'd recommend Adium, where you can download several different sound schemes, and control the volume of them independently form the computer's main volume.
