I am thinking about update, because app are requiring newer iOS versions all the time.
But I am really afraid of my iPhone slowing down to a crawl, as happened before.
Should I update?

My X has run fine on iOS 15 but there have been some with older devices that have had performance, battery and other bugs with iOS15.. I had Apple replace my battery last November (capacity was at 80%) so my phone was at peak performance capability at the beginning of iOS15. Not sure if it made a difference but remember, once you update you can't go back..

iOS 15.6 runs perfectly on an SE1… why wouldn’t it run well on an X?

Yes, do it. I have two iPhone X in my family and they both run fine on 15.6, given the expected stutters and lags and bugs. Nothing too excessive. Probably not worse than iOS 12.

Big NO. I have iPhone 11, become slower and easier to get hot in iOS 15 compared to 14.8.1. My wife has X, but it still snappy (faster than mine) - it stay at 14.7. My son’s iPhone 6s also become (much) less usable after update to 15 (from 12). Battery drain, slow and heated easily. Battery life is very critical for me, as I prefer not to bring powerbank with cable attached to phone everywhere.

If you're still not sure you can just lookup a video on YouTube about how iOS 15 runs on the X. I certainly wouldn't say that it slows it to a crawl.
