Once I am able to jailbreak my second generation iPod Touch, how will I be able to update it to newer software versions.... How has this been done in the past (ex. upgrading a jailbroken 1.1.3 to a 1.1.4, etc.)

Usually you just restore your ipod to the newer firmware once the jailbreak has been released and then just jailbreak it all over again.
