I want to prepare my computer for a new owner, should I delete Macintosh HD - Data or Macintosh HD?

It Ohly says ”Erase your hard drive” it does not say Witch one

In that section there is a link to a page which explains how to do that.

I believe that both those volumes will be totally erased and recreated if you follow that procedure.

Boot to Command +R > Disk Utility > click view all devices > erase the Apple SSD (with numbers in the title) > rename to Macintosh HD > and then tap on reinstall OS (don't complete install with signing into your Apple ID etc). That should get you set for the new owner.
