You mean at a given time, or after a given amount of inactivity?

You can schedule a shutdown time in System Preferences > Energy Saver > Schedule.

you can kind of do this already in the energy saver system preferences. click on the schedule button on the lower right, and you'll have options to wake, startup, sleep or shutdown.
