Can you please be just a little bit more specific? (meaning: what exactly you want to do)
 
Instead of Boot Camp (which would allow you to run eithger macOS -or- Windows, but not both), I would recommend VirtualBox for Mac (it would allow you to run both macOS -and- Windows at the same time). Gaming takes a lot of resources, so realistically you can only do it on Mac Pro.

I haven't tried Virtual Box. I use Parallels which is pretty good for running Windows too. it actually works great as they support it well for the latest MacOS and Windows releases but you do have to pay for it initially and there are recommended upgrades every two years for the new MacOS releases to work properly so estimate about $25 per year average cost to maintain it over the long haul.

Seems to me that the souped-up GPU in the Mac Pro will win this contest hands-down.

More than just "hands-down", it will be a runaway.

Having said that, if you really REALLY want "highest quality pc gaming", well...
... get a gaming PC and be done with it.
