What's the easiest way to record just audio from my macbook's camera?

You could use Garageband, but honestly, I recommend Audacity: http://audacity.sourceforge.net/

Might be worth a try.

As a no hassle it's there for you ready to use.
Garageband is your best bet.

There are lots of free apps out there though like:

Sound Recorder

Audio Recorder
