I don’t think I’ve ever seen such a weird transition to a newer version of the app (same probably applies to Pages, etc).

Upon finally saying yes to installing the new version of Keynote - an app I’ve used every week for the past 15+ years - it created a new Keynote app icon and left the old one in my dock.

What?! This is very un-Apple. Not intuitive at all.

I’m probably more nerdy and pro than most users, but even I’m baffled.

What’s the difference apart from the premium features that I have to pay for?

Why is there now two Keynotes in my dock? 😂

Apple, in the decades I’ve used your stuff, I’ve never had such a ‘cheap’ feel about an update like I have now. And this is on the back of the cheap Glass update last year.
 
It is odd, isn't it? On my iPhone and iPad Pro the new apps just replaced the old ones, like you'd expect. For whatever reason, on my iMac they installed as separate apps, and after I checked to make sure the newer versions work, I simply deleted the older versions.
 
The old apps were actually two separate apps. There was one that only supported iOS/iPadOS, and one that supported only macOS.

They discontinued the macOS-only version (now called Keynote 14.5) and added macOS support to the existing iOS/iPadOS version. It's now a universal app. The same thing happened to Numbers and Pages.

There's really no way around it, but I agree...Apple should have at least explained what's going on and what to expect.
 
BigBlur is right – "version 15" of Pages, Keynote and Numbers are what to this point have been the iOS versions of the apps.

(Somehow I wasn't confused about this; the wording of the alerts that "this version will no longer be updated," along with the appending of "14.5" to the existing apps' titles in the App Store, tipped me off well enough. Meanwhile, the non-formerly-iWork "Creator Studio" apps – Final Cut Pro, Motion, and so on – also come in two separate versions now; the "Creator Studio" versions are the ones with the simplistic icons.)

(I'm personally glad it's this way. "Upgrading" Keynote and friends, what with the Liquid Glass adoption and the interspersion of the paid material, is something I wouldn't want to try without the ability to keep the existing tried-and-true versions.)
 
Ok I'm dealing with this right now but with Pages. I'm not going to pay the Creator Studio fee but I'm assuming I can use the new Pages 15 without any issues, correct? Besides not being able to use the new AI features or whatever Creator Studio gives me?

That's correct. Other than the changes to the UI, like the more rounded corners and other things for the Liquid Glass look, the only difference I see is the ad at the top of the templates view and some templates being marked with the AI symbol. I don't use any of the AI or collaboration features at all, so for me the only difference is the new look and whatever bugs they fixed.
