Go to the Friends setting in the Watch app on your iPhone. Add yourself to the friends wheel. You can send and receive messages to and from yourself as much as you want.

Same. I don't think sending messages to yourself is supported.

Not sure why - mine worked fine, and as soon as I exited Digital Touch a notification came through to say I've been sent a message.

Is the email/phone number in your own contact associated with your iMessage?
