I was able to get a video. The ECG kept recording AFTER I removed my finger from the crown. There was nothing completing the circuit! Has this happened to anyone else? Pardon the lighting in the video, I had to grab my phone quickly to get this. TIA
I bet the crown is somehow touching your skin and technically "completing" the circuit.

Then something might be wrong with your watch. I just tried it and as soon as I remove my finger from the crown, it resets. I'd try restarting and trying again.
I already did a restart. It happens intermittently.
Sounds like you need to visit the Apple Store. If you can demonstrate this problem, they will replace your watch.
I may start a call with Apple in a bit and show them the video. Thanks for all your help.

I have cleaned the crown, but thank you for the suggestion. It only happens intermittently.You could try cleaning the crown. This is measuring a a very small signal so maybe a little leakage current from somewhere is enough to fool it.

Have you tried doing a reset and setting it up as new again? My wife was having an issue with hers where the battery was tanking badly and that cured it. It might not with yours, but worth a try before making a trip to the Apple Store for a swap

Mine is doing the exact same thing right now. I did just get out of the shower about ½ an hour ago. Thinking it may be related and bet the OP's was wet before it happened too. Will try again in an hour or so and report back.
I'm completely dry and so is my watch. I meant was your watch wet sometime before you tried? Did you swim, shower or wash your hands earlier and get the watch wet?My arm was dry when it started happening to me. I’m sorry it is happening to you too.
