Soooo I was on my 16” MBP and I plugged in the power cable. I already had a hard drive plugged into one port and an SSD plugged into another. I’ve done this a million times.

When I plugged the power cable in, I immediately smelled a burning smell So I quickly pulled out the cable and unplugged the AC adapter just in time to see my MBP screen go black. I can’t turn it back on.

Is my MBP most likely hosed? Or is there anything I can try?
 
If you smelled something burning, I wouldn't risk it and immediately go to get it checked.
Have you had any problems with your MacBook prior to that?

If you are smelling something burning followed by the system not working, I agree that the best course of action is seeking Apple Support rather than trying anything further. When getting service, it may be worth asking they test your power adapter as well (whether you send it in/take it in.) Sorry to hear :(
