If I build an interface in Interface Builder that has 2 different parts. Using something like Chown33 example of Cards and Dice. Should I create 2 different appController Classes one for the Dice, and one for the Cards? Or is it better coding to just have 1 appControler to handle all of the IBActions and IBOutlets?

I would do just one controller most likely. Unless there was some other architectural reason in the program to separate them.
