My iCloud App doesn't show that I have any files in iCloud, yet settings says I only have 371 MB available. So why doesn't the iCloud App show what's in there?

There are various things that use storage but don't show in iCloud Drive. Examples would be:
    - App data that is not file-based (synced settings, for instance)
    - Photos
    - iDevice backups

Go to Settings > iCloud > Storage > Manage Storage to see exactly what is using space.

In settings for iCloud, I have the option of Photos. So why wouldn't they show in the iCloud App? Something is being stored in there for all the available space to almost be gone, yet I can't see what it is.

The iCloud app is just a simple interface for managing documents. Photos are managed in the Photos app, and Apple has an entire section of Settings specifically for finding out what is using space in iCloud. No reason to clutter up the app moving in all the redundant functionality.

The point still is that I can't see any files using the iCloud app. I can see and access the files on my computer but not via this new iCloud app.

What desktop or notebook computer are you using? The iCloud Drive app should work fine if all your devices are iCloud Drive compatible, i.e. OS X Yosemite or later, iOS 8 or later and iCloud for Windows 4.0 or later.

Please also note that iCloud Drive shares the iCloud storage space with other iCloud services, but works independently. In other words, you won't see your iCloud Photo Library in your iCloud Drive.

I am using Canon's scanning app - all scanned files appear in a Canon folder on my iCloud drive app on iOS but would not show up on my Mac in my iCloud Drive.

I don't think anyone would have a solution to this? I suppose this is down to the developer how files are being displayed on your iCloud Drive ?

I know in mavericks you cannot copy a folder to the iCloud drive. But I was wondering if you can copy a folder in Yosemite to the iCloud drive???
