I'm torn this year, as I tried Phone to Phone last year, but it was really time consuming and didn't work well.

I'm moving from a 1TB 14PM to a 1TB 15PM, usually do iCloud, but Phone to Phone or Encrypted iTunes Backup is looking attractive so that I don't have to login to everything again,

Is there an advantage in doing Encrypted iTunes Backup over Phone to Phone?
 
I did a phone-to-phone transfer (as I have done the last several phones) and it all went well EXCEPT it didn't transfer the cell service (ESIM) from the old phone (14 Pro) to the new phone (15 Pro). I tried several times and finally got a message (on the new phone) to get in touch with the carrier (AT&T) rather than Apple. It took me about 10 minutes to get in touch with a real person for a slightly curious conversation. I was never asked to really explain my problem (which was curious that the support person I was talking to never asked - he seemed to already know the problem. I was only asked questions to identify me as the legitimate "owner" of the account and the phone number, the IMEI of the new ESIM and a couple (more than one) of 6 digit 2FA codes I was sent to prove who I was. I was finally asked to call a number and the call went through. I then asked to test a incoming call which AT&T placed and BOTH old and new phones rang with the call. I mentioned that and was told the old phone would drop out once restarted which was what actually happened.

I suspect AT&T was blocking a transfer of the old ESIM phone number to the new ESIM and this is why they fully understood the problem without asking me to explain it - they knew about the problem already - and how to fix it.
