Move iCloud drive to external drive?

I want to install Big Sur onto an external 120GB SSD and have that be the boot drive, with the 2TB internal Fusion drive used for storage. I know how to move the Home folder BUT I have a 200 GB of iCloud stuff, including synced Desktop and Documents folders. Can this be also relocated?

I have a similar question but kind of the opposite. I just installed Big Sur on an external m.2 2TB SSD, booted, and added my iCloud account w/ Doc & desktop sync enabled. I figured all the files would start downloading as they do after a clean install, but they all just showed up immediately. When right-clicking on the iCloud documents folder it takes me to the previous internal (iMac Fusion) drive Documents folder. I want to know if I can move those to my external m.2 ssd, which is now my boot drive. I'm not sure why or how the mac would have decided to use the existing files on the old drive.
 
I just installed MacOS on an M.2 and only when I created a file within the iCloud Drive on the external boot drive did iCloud Drive start to sync between the external and internal.
