I'm on iOS 11 B3 and have Photos turned on in my iCloud settings. I'm downgrading to 10.3.3 tonight and since some pics have been taken on iOS 11 will they still be there when I downgrade as I know you cant install a back up from a beta on an earlier iOS, just thinking if I might get the same sort've problem with pics.

Also is there anything else I'd lose out on, like any health data etc etc?
 
If you took the pics as JPGs they will be there. If you took them as HEIF, they will not be readable in iOS 10.

iCloud Photo Library is different than iCloud backup; older versions of iOS will generally access it fine as long as you're using JPG.
