Which is better if i want to sync and back up my stuff such as calendar, contacts, phone favorites, notes, documents and data, app data, and camera roll? My camera roll is 4GB's. I don't care about music an movies.

What's the difference between the two sync methods?

I use both. Turn on iCloud sync and you can forget it and it will backup OTA with no intervention. Then once in a while do a manual backup with iTunes. Just plug in the device and click Back up Now in the summary tab.

One is stored in the cloud and the other locally on your computer. The local, manual backup is better for the camera roll IMO due to size/bandwidth.
