Can someone talk me through in simple not too technical terms how to remove an old icloud account and reinstall a fresh one.
My old account is set up with an old email address and I have long forgotten the password.

Just sign in a the Apple Support site My Apple ID and when you sign in go to you account and create another! Once that is working to your satisfaction then get back in to your account and delete your current ID! Plus this will also affect your Music application sign in too!

I forgot to mention. I already have an apple ID for buying music etc: but it doesn't work with icloud. My icloud account is set up with an old email address and a password that I have forgotten. Is that possible?

Yes it seems one is because of different hosting partners. This is true and it amazes me to this day that this is still a thing!
