Iconless apps?

So is there anyway to remove icons and labels from the apps and just use text? For Example instead of having the Gmail icon, i would like just text that reads " GMail"

Is this possible?

Not until a Jailbreak is released. Apple doesn't give you that level of customization out of the box.
