If i erase the phone from settings, will that remove jailbreak from privious owner?

Sorry i meant 11.4. Will updating to 11.4, and after that erasing the settings again assure me that everything is gone, even governmental level spywares? Becuase i've never heard of jailbreak surviving update. Even android rooting is disabled when you securely update the firmware?

the only thing that will 100% guarantee there's no spyware etc is for you to trash your iPhone and your computer.

I know i am way to paranoid. But i need to cover atleast anything that can be covered. Thanks by the way for the time explaning to me.
I do belive now that with the upcoming update of the Ios, plus another factory erase after that i'll pretty much be safe. Because i feart that if i reinstall the phone through itunes, my computer is old and buggy it may infect the device even worse. So ill wait Hopefully
