Please tell me I still can.

If so, is there a possibility certain tweaks won't work unless updated?

If not, what are the odds a replacement 4S from the Apple Store will be pre-loaded with iOS 7.05 already?

Correct, you will not be able to JB it.

Since 7.5 does not exist, there has yet to be a successful exploit.
 
I don't believe it has been exploited either. 7.0.4 is the max.

0% chance you'll get 7.05. 7.0.4 is the max, next revision will be 7.1....

And more then likely 7.1 will block a jailbreak temporarily. No telling how long until an exploit is found.
 
7.0.5 is currently only released for the iphone 5S and 5C.
So odds of you getting a 4S with a firmware that doesn't exist for that device are pretty slim.

Really? Considering it came out minutes ago and to select iPhone 5S/5C models.
I think its probably a little premature. You might want to reconsider your whole jailbreaking career.
