iPhone X If I trade in my iPhone X at the apple store for credit and I buy a iPhone 11 with both the phone credit and cash. What would happen if I returned it?

Interesting question. My understanding is that if you paid in full cash money and you return it, I'm not sure if they give you the cash back, they normally would send you a check of that refund amount by mail. Never done that before so.
Most likely they may put that refund amount in the gift card. Depending on the apple store, but the apple store near me has a limit of $500 being put in a gift card at one time so I'm not sure how that will work.

Here’s a bizarre idea. Call Apple support and ask Them
This. At least the gift card portion. Credit card just gets the charge reversed.

However, they also say:

They’ll refund to the original payment method for the amount you actually paid and issue you a store gift card for the trade-in.
You get a gift card for the amount of the iPhone X trade-in. And the money you paid with for the new phone goes back to the form of payment used.
