Like if I use the store credit/ gift card and cash for the rest/difference and return the phone I buy a week later.

What exactly happens? Everything back in cash?
 
Interesting question. My understanding is that if you paid in full cash money and you return it, I'm not sure if they give you the cash back, they normally would send you a check of that refund amount by mail. Never done that before so.

Most likely they may put that refund amount in the gift card. Depending on the apple store, but the apple store near me has a limit of $500 being put in a gift card at one time so I'm not sure how that will work.

This. At least the gift card portion. Credit card just gets the charge reversed.


However, they also say:

For returns to an Apple Retail Store for cash, cash equivalent, and check transactions over $750, Apple will mail a refund check to you within 10 business days.

which does not necessarily mean the gift card portion will be turned in to cash, imo, as can see Apple not wanting to do that as they want that gift card spent with them.

You get a gift card for the amount of the iPhone X trade-in. And the money you paid with for the new phone goes back to the form of payment used.
