Myself?

Some “magical” sensor that can sense when I’m down (I have mental health issues) and motivate me/suggest actions to take.

What about you?

Battery life is it for me. I am no fitness person (I'm huge), but I went with the Ultra because of the battery life. I love getting 70+ hours of battery life on this thing without trying. But I miss the size of the normal AW.

Battery life is the thing I'm looking at the most. I'd like to charge it up and at least use it for 3 days without having to worry about a charge like I do with my Ultra. My AW7 got 1.5 days and that wasn't bad but I REALLY like my Ultra's battery life.

Body temp sensor that takes temperature on demand. Oh, and it would be nice if they could somehow add a sensor that measured ambient temperature, so I could see the temperature where I'm at, not just get the temperature from the weather report. And a bright flat screen like the Ultra.

New health sensor, blood pressure would be next ( Samsung offered that in their S5 last year) but I doubt we’ll see it this year.

Glucose monitor
that would be nice, but for true CGM (a la Dexcome for example) the AW would have to be a medical device (Type 1 diabetics depend on CGM for insulin intake) and I seriously doubt Apple would put that into the "standard" AW, a "special" edition maybe, but you'd have to be prepared for a 4-5x price (and diabetics would br happy to pay for that).
Technology-wise it's not that far away ...

Agreed, there are other wearables out there that do a blood pressure reading. Why not Apple?
Probably because Apple wants the technology to mature to the point where the BP reading is accurate enough to get FDA approval. From what I've seen in various forum threads, those Galaxy 4 and 5 watches have to calibrated against a regular blood pressure cuff every few weeks, and even then, many people report difficulty getting accurate results. For me, an inaccurate blood pressure measurement on the watch would be worse than not having it at all.

That's my dream too. My watch could replace my phone for everything except photography, if only it could send audio direct to my hearing aids without the phone present.
I'd also need CarPlay support... but that's a bigger ask ;)

its been reported that apple does have a working prototype glucose monitor, its just that its size of table top right now.
so that's long term (not a joke. that was the actual rumor).

what is feasible right away, but not evidently doable on the wrist right now: body temperature.
apple can do it if they put the sensors into AirPods.

Not just diabetics. CGM should be easily accessible to all (ideally). For anyone who cares about their nutritional biochemistry, it’s important. I hope that it’s soon cheap and easily accessible.

As a type 2 diabetic, another vote here for blood glucose monitoring. Blood pressure monitoring would be amazing too.

Mind boggling to think how many more they’d sell once these are available.
