As the titles states, I need an iPad pro, a used one. It must be a 12.9 display. Is there a specific generation that I should look out for?
I'm definitely not looking to by a new one.

Doesnt look like they have any on sale today. But in a few days they will. It's a popular item of theirs.

Yeah, as @sparksd mention… 3rd generation 12.9” iPP is consistently stable. I have one, been using since it first came out… haven’t had any issues with it.

I think you should wait for the new iPad Pros to come out next month. The older iPad Pros will likely drop in price.

I owned a 2018 12.9" 1TB Pro and sold it last summer. I liked it, it was just really overkill and I wanted to sell it while I could still get $1000 for it. I now have a 2020 12.9" 256GB model. Both are solid and honestly, I could not tell the difference between the two other than the cameras in the back.
