Hi, starting with Big Sur, and now with Monterey, I have grainy glitches (finder windows that appear near che dock... but there aren't real!) and a high video memory usage (see attachment)!
How can I analyze witch app use this memory and... how can I solve the problem?

While I don't have an iMac I've noticed the same issue with my 2018 Mini + RX580 eGPU. MacOS for some reason will not let go of VRAM easily despite the things using it no longer being open.
For example, I hit the spacebar on Finder to look at pictures and files and after a while the 8GB of VRAM is maxed out and things get a little choppy. Same goes for Preview, if I open a large 500MB+ image file MacOS will not let go of the VRAM for what seems like forever.

Now I've never gotten phantom windows like you. I'm not at my Mac at the moment but doesn't iStat tell you GPU dependencies if you open it or highlight it?

Second update: I have a video of my glitch.
The "iTunes windows" near the dock, in reality is in the center of the screen...

 
High GPU memory usage is normal. High GPU memory usage does not mean it is "used up." There is no reason for the computer to flush the GPU memory until it is needed.
I understand that changing the display settings (like changing resolution) will reset the GPU memory usage. See if this helps.

Huh? If its choppy, its used up and it isn't very efficient at "flushing" it either.
