Debating iMac 5k w/ 1 TB fusion drive vs MacBook Pro 256 gb. I don’t need portability. Got a better deal on iMac but regret fusion drive. Will I still be in good shape?
 
If you "got a better deal" on an iMac (does that mean it's already bought?), then you have what you have.

If you don't need portability, why buy an expensive laptop?

I'd return the 1TB fusion drive if it's still in the return window. I think 2TB fusion model is fine for many users because you get 128GB of dedicated flash storage. The 1TB fusion shouldn't even be on the market anymore IMO.

If you don't need the portability and want the most for your money, stick with an iMac and just get a different configuration. Preferably one with an SSD.

Return the iMac and get the most expensive Macbook Pro.

You're going to want to future proof as much as possible (and take out as many loans to do so).
 
256Gb SSD suggests not a 16" MacBook Pro - are you referring to a 13" Macbook Pro?
 
I'd get the iMac w/ an SSD if you still can. I have the 2017 5K 1TB fusion model, and while it's totally fine for my usage, if you are USED to immediate speeds and stuff, you might be annoyed by the few seconds something might take to open. Honestly it doesn't really bother me much. It's a great computer, but I think most people would benefit from SSD.
 
As others have said, only reason for MBP is powerhouse portability. Since you don’t need that, put the money into an upgraded iMac. And skip the rotating disks altogether fusion or otherwise...they are so last decade. Even my 2012 MBP had an SSD...I’d not want to go back. And as @velocityg4 said, get a fast external hard drive for cheap. I use two: one is 8TB and the other is 4TB. They are fast enough for storage, cost less than $300 for both, TimeMachine is in heaven, it’s all good. If you’ve got the network to do it, put one of the larger drives on your router to share.
