I would like to use my iMac as a screen for my MacAir. What are the best ways of achieving this?

Also how does this affect use of the iMac

Your iMac's model and specs? The latest 5k retina one from 2014 does not support this feature.

Very simple, please read Apple's advice letter on Target Display Mode. You can find it by clicking https://support.apple.com/en-us/HT204592

In that letter you will find which Macs are capable of TDM. If your machine is not on the list then there is no other viable method.
