The original hard drive died, and now a replacement SSD too. I have a spare IDE 2.5" hard drive from an AppleTV I was thinking of putting in instead. But since it will be much slower, and seeing that the 2.5-3.5" bay adapter can fit two 2.5" drives, will there be any benefit of doing so? Do I need also an extra IDE cable, or is it not possible at all?

The G4 iMac can only have two IDE drives in it. One is the hard drive and the other is the optical drive. There's only one IDE controller, even though there are two IDE connectors on the logicboard. Of you do that, you'll have to remove the optical drive. And because there's only one controller, a RAID won't be very efficient because it'll only be able to access one drive at a time.
