Yes it did, as confirmed by Everymac:
The Apple iMac G5/1.6 17-Inch shipped equipped...
an 80 GB (7200 RPM) Serial ATA hard drive...

I would be happy to disassemble mine to prove this. ALL G5s have SATA. Every single one.
