iMac Ram - Can I Install one stick only?

My new iMac is on the way (along with 2 32G RAM sticks). Unfortunately, one of the sticks was backordered and will be a week late.

Is there any issue with installing 1 stick and leaving the other 3 slots empty for now?

Nope, it still works but on single channel memory instead of dual channel. That just leads to a bit performance loss on certain tasks.
You might need to put your single ram to the first slot.
