I have one of the new iMac 20" 's and was wondering if its possible to use the display for the Nintendo wii (planning on getting).

If you get a tv tuner, like the EyeTV ones from Elgato, this should be possible.

What sort of quality should I expect using a tv tuner?

The quality will be standard definition, via RCA connectors but due to hardware encoding of the eyeTV and other systems controls might seem a little laggy
