Image previews might not be the correct terminology so I apologize... but this began happening a few days ago... I have no idea why (maybe I did a system update... I dont remember honestly. I have had the flu the past few days so have been pretty delerious and on cold/flu meds) .

Any ideas on how to fix this?

Sometimes things don't display properly in quick view because the content doesn't agree with the file type. For instance, a text file with a jpg extension gets displayed as an icon because it can't be displayed as a jpg.

You show one folder where this is happening. Try looking around at other folders. Double click a few of the files and see if they display properly in Preview. BTW, Preview is a separate program while quick view is a feature of Finder. So picking a file and selecting quick view shows its contents if OS X can figure out what to do to show it. Double clicking a jpg file might open Preview or even iPhoto.
