i deleted a contact off my iPhone but kept the messages. In iMessage it shows the phone number and then maybe with the contact name.

The only way I know how is to add them as a contact. Then the "maybe" disappears. Any reason why you'd want to save the messages but not the contact?

You can click the "i" and choose "remove from recents" but that will remove their name and show only their number.
