So I was away and had a SIM somewhere else, but now back in the US... that SIM's number is greyed out in the iMessage settings and my USA number is nowhere to be found!

Anyone know a fix? Some said to toggle iMessage on and off, but as far as I know that breaks all of your existing conversations.

If you toggle the setting on an iPhone, you will not lose any of your existing messages/conversations. This is likely the only way to get the USA number back.

This is true. My phone was replaced at Apple for another reason and upon powering on ... iMessage was working with my number. However, it reverted the old settings upon restore from a backup. Toggling iMessage on and off worked, though!

did you take the old foreign SIM out? which phone and carrier are you using this on?

i would suggest turning imessage off and on again and resetting the network settings.
