So.... how do I edit the new iOS11 HEVC video format on iMovie for Mac?

I can do the edits on the iPad but iMovie.app is a bit shallow compared to the desktop version. I know I can convert the HEVC format to something old but that just seems a bit backwards considering this is Apples new format decision and Apples own consumer editing programs.

The macOS iMovie app was updated a few hours ago with updated codec support, a quick test of it gives HEVC support - no issues so far.

Yeah. i saw that update came just an hour after my initial post. Thats great except for one thing.... High Sierra only. :(

I am still on El Capitan because I run Aperture and that was the last version where its stable. But HEVC is important so I'm doing a few OS backups and I'm going to jump on (or off) High Sierra. From what other Aperture users say then I'll lose Full Screen editing and I'll have a few crashes but it should run "good enough".

Create a separate install of macOS on an external drive. That way you can run El Capitan or High Sierra when required.
