When exporting an iMovie project there are several options available (hover the mouse pointer over the project in question and a "circle with 3 dots inside" symbol appears at the bottom-right hand side of the project's preview image (when you're in the iMovie "Projects" section. Click on the "circle with 3 dots inside" symbol to get the following options:

So my question is: what are the settings for each of the sharing options (email, iTunes, Youtube etc.) and how do they differ from each other?

I'm working on a few iMovie projects (consisting of video clips and photos from current phones and compact cameras) and want to share them with family and friends, obviously with the best possible quality, but not unnecessarily high quality (that won't be noticed anyway) only to make the files unnecessarily big.
I plan to share them via download services (WeTransfer, FileMail, DropBox, TreaShare etc.) and the recipients will probably view the video on their phone, iPad, Mac, PC or TV.
What do I choose and what's considered "normal" in file size for say a 1 hour video?
I'm guessing MP4 would be a good file format choice?

Thanks, but I didn't intend to send it by email (since it restricts the file size too much and most people don't like to have their inboxes filled up), but rather an online file-sharing service without size restrictions.

I ended up choosing the "File" sharing option with its default settings. Is this a generally good choice or overkill?

I've experiemented with different sharing options/settings, but it's hard to determine the differences except the obvious ones. Is there an explanation/overview over the specific parameters that Apple has used for the different "Sharing" choices and options?
 
The manual explains all the options. Again, your question was "what are the settings for each of the sharing options (email, iTunes, Youtube etc.) and how do they differ from each other?"

But then I wouldn't overthink it and simply use the best possible settings and then upload it to Youtube and set it to private or unlisted. Youtube figures out the rest for each viewer and they won't have to download some massive file. Done.

And next time, you might want to specify which version of iMovie (and OS) you're using, since it's clear that you're using a massively outdated version. In that case, the above manual doesn't even apply; you'd have to check the one that is installed!
 
I'm using version 10.1.12 on MacOS 10.14.6 Mojave.
I haven't been able to find a user manual for it online. Apple appears only to have the current version's manual available (I even tried the Books app to search for/download it).
