I just got these Philips earphones:

They look and sound great, but I can hear my breathing, the cord moving or brushing against my shirt, and even my heart beating between songs. Is this normal for the in-ear variety because of the physical noise isolation/blocking? Do the Shure and Etymotics create this effect also?

Etymotics do, so do shure, just at varying extents, so do v-modas.
 
Yes, it is normal, albeit very irritating.

It is often called the "microphonic effect", although I'm unsure of the technical accuracy of that phrase.
