On one of my accounts, incoming mails are ever 'already read' (Mail app).
Does anyone know how to solve this problem?

I'll take that as a "yes" and you did check.

When you're looking at the email provider's web interface, the Mac's Mail app is NOT running and a new email arrives…is it read or unread?

🙂 I had misunderstood the meaning of 'check' (I thought you meant to ask if I had selected 'rules'). Anyway, yes, I had checked (in the sense of 'verified') both in the mail app and in the web interface

Good idea.
I tested sending some mails from another account under the following conditions:
- mail app not running, check performed by web interface and then by mail app
- mail app running, check performed simultaneously from the web interface and from the mail app
and in both cases the mails were displayed regularly and appeared 'unread'.
...actually I could not reproduce the problem

'man in the middle' reading your email?
or company monitoring
I exclude it. It's a personal account, I'm a freelancer and the problem occurs systematically, even with messages just sent and received.
But just to be on the safe side, I have now replaced the password
