My parents have a Mac Mini attached to their TV, but ideally we'd like the font sizes and general appearance of OS X to be bigger. Changing the resolution isn't ideal as it's an LCD, so i'd rather change font sizes like you can in Windows. Does anyone know of a sensible solution?

Sure. Click on the desktop so that you're in Finder.

Then press Apple-J to show view options. (Finder Menu>View Options)

You can adjust the icon and text size there.

But also, if you're just browsing a web page or whatever you can increase/decrease text size using the Command and +/- keys.
